Grapes: 100% Merlot
the base wine is obtained from Merlot grapes harvested together, destemmed and fermented with the skins for four days.
For refermentation in the bottle, the same must is used and stored in the freezer until the following spring, the period in which the secondary fermentation takes place. It is a wholemeal sparkling wine refermented in the bottle, without the addition of yeasts, sulphites and sugars, unfiltered and undisgorged, therefore it presents itself intact on its natural yeasts, veiled with evident deposit.
