Soil type: clayey with widespread limestone presence - emerged lands formed by marine sedimentation -
Training system: against espalier with Guyot system
Planting density: 5700 vines per hectare Maximum production: 0.8 kg per vine
Agriculture: sustainable, applying the principles of biodynamics and in the wake of certified organic n. 73198; IT-BIO-015; S21-21/23. By resorting to the use of actual microorganisms in order to also minimize the use of copper and sulfur.
Harvest: first week of September, by hand in boxes
Vinification: Soft pressing of whole bunches, static decantation of the must and tapping of the clearest and noblest part, fermentation at 18-20°C
Aging: 6 months in steel tanks on fine lees
Alcohol: 12.5% Sulfur: between 20 and 40 mg/Hl
