Grapes: Lacrima
Wine: vinified in 100% Lacrima purity
Soil type: clayey – emerged land formed by marine sedimentation
Training system: against espalier with Guyot system
Planting density: 5,700 vines per hectare / Maximum production: 1.2 kg per vine
Agriculture: sustainable, applying the principles of biodynamics and in the wake of certified organic n. 73198; IT-BIO-015; S21-21/23. By resorting to the use of actual microorganisms in order to also minimize the use of copper and sulfur.
Harvest: mid-September to early October, by hand in boxes
Winemaking: destemming without pressing, spontaneous fermentation, maceration of the skins with frequent pumping over, racking before the end of fermentation. Aging: a part in buried amphora, the remaining portion in steel tanks for 8 months.
