MONTEPULCIANO
Marche Red without added sulphites produced from hand-harvested grapes. Fermented in steel with 20-day maceration on the skins, followed by refinement in terracotta. We produce following strict self-regulation which prohibits the use of any allergen or any preservative or stabilizer. The sulphite content is generally below 10mg per liter and is due solely to the presence of indigenous yeasts which produce these tiny quantities during fermentation. The fermentation activated by indigenous yeasts does not require temperature control.
