Obtained from an old vineyard over 50 years old, in the heart of the Grand Cru of Avize , this Champagne will undoubtedly make the biggest fans of the Blanc de Blancs type fall in love. Venus , 100% Chardonnay, it is one of the most refined creatures of the genre, the result of manual harvesting and spontaneous fermentation, without the addition of yeasts in oak barrels as well as aging for at least 60 months on the yeasts. The credit undoubtedly goes to the terroir of Avize, which offers all the sacrosanct conditions for a masterpiece like this, but also to a family, the Agraparts, who since the end of the 19th century, with the most authentic respect for the environment, have been working with commitment and dedication to offering true bottled masterpieces, with the aim of preserving nature. Suffice it to say that, for work in the vineyard, draft horses are still used, because tractors could stress the ecosystem!

Intense straw yellow color with a very fine perlage, on the nose it is a symphony of aromas ranging from aromatic herbs such as sage and lemon thyme to lavender, from green tea to yellow rose, from toasted hazelnut to tobacco, all embraced by intense balsamic nuances. A wide-ranging tasting, it literally involves every part of the mouth with body, structure and freshness, all crossed by such a mineral flavor that it completely subjugates you. The persistence is very long in which the toasted dried fruit returns with a touch of salt.
