Vinification: Manual harvest at the end of September with soft pressing of the whole bunch. This is followed by cold static decanting without the aid of clarifying agents. Fermentation at low temperatures and subsequent permanence on the yeasts for correct taste-olfactory evolution, then a light filtration before bottling
