Spur cordon setup, 5,000 vines hectares. Organic cultivation, manual harvest with selection of the bunches.
The grapes, exclusively grown on the farm, are harvested manually when fully ripe, taking great care to ensure that the berry does not
break, and immediately vinify with soft pressing avoiding contact with the skins. The first fermentation takes place in steel tanks,
fermentation which stops with the first cold temperatures when a residual sugar of approximately 24 grams per liter is still present. It is bottled
with the arrival of the heat which favors the awakening of the yeasts which transform the last sugar residues into alcohol, thus, naturally, a
second fermentation in the bottle. The disgorgement is done manually, after 100 months of fermentation in the bottle, and the bottles come
fill with the same wine without adding anything.
