He is approaching organic viticulture, but his wines have always been fermented with indigenous yeasts. Claude Papin's Chateau Pierre Bise uses a single grape variety, Chenin Blanc, the undisputed king of this region. Classic methods are born from its vinification, i.e. cremants, dry wines, up to sweet or even sweet wines.
